*5 Ingredient Friday*

Happy Friday everyone! Hope you all had a lovely *quick* work week :)

It's time for another round of 5 Ingredient Friday! If you missed last weeks post, you can click on the link here & read all about my new series.

This Friday, I figured there was no better way to end the work week than with a dessert. A Granita to be exact. If you are unfamiliar with what a Granita is, it is a Sicilian semi-frozen dessert made from sugar, water and various flavorings.

The only thing with granita's are that they tend to be a bit time consuming. So make this on a day off..when you plan to spend your day at home :)


Coconut Chai Tea Granita



1 can coconut milk, preferably full fat
4 chai tea bags
2 +1 c water
1 c sugar

*Place 1 c water + 1 c sugar in a small sauce pan. Cook over medium heat until sugar is dissolved. Set aside & allow to cool.

*In a medium sauce pan bring 2 c water to a boil. Once water has reached the boiling point turn off the heat & place tea bags in water. Cover with lid & allow to steep until cool.

*Place glass baking dish in freezer while everything cools. ***Size DOES matter :) I would choose a bigger dish~More surface area=quicker freezing time!

*Once simple syrup & tea are cool, combine with Coconut Milk in baking dish and place in freezer.



*Check after about an hour to see if ice crystals have started to form. If so, rake through mixture with a fork to help separate.

*Repeat this process every half hour to 45 minutes for about 4.5-5 hrs (depending on the size of the dish). I believe mine was 9x13 and I felt like it took FOR-EV-ER! Eventually, it will resemble what we know as italian ice..When it has reached this stage, it's ready :)

*Scoop it into your dish of choice and enjoy!


Slightly Creamy. Coconut~y. With a hint of chai. Mmmm

Definitely cooling and palate cleansing!

This will stay good in the freezer for a couple days, just rake it through with a fork before serving.

Fabulous Sunday Part 2...on a Thursday...

What can I say i'm a busy gal ;)

So where was I? Oh yes, gorgeous sunny day. Energizing bike ride. Delicious breakfast. What more could one want?

Well, my answer is a picnic. With good company.
Wish granted :)

My friend Angie just returned from a 3 month stay in Holland (lucky!). Missed her so much and we had so much to catch up on so we decided to spend the afternoon together. We had such a good time~chatting, drinking wine, painting our nails with some new crackle nail polish I just bought and listening to PBS opera. A Chinese American political opera...who knew?

Before we headed out to get food for our picnic we decided to play America's favorite board game...


What's that you say? Scrabble is not America's favorite board game?!?! A triple letter and a triple word score on the word 'zebra' might persuade you, no? :)

After a riveting game, we headed off to pick up some goodies for our picnic.

On the menu:
Warm (fresh from the oven!) French Baguette from Panera's mmmmmmmm
Goat cheese
Strawberry Jam
Sundried tomatoes
baby carrots
pineapple & blueberry fruit salad
VINO! of course ;) {It was supposed to be reminiscent of a picnic we had in France at the Eiffel Tower :)

Grabbed our food & drink and headed out to a local park to enjoy. It was a gorgeous breezy, sunny afternoon..couldn't be happier.



I sometime forget how gorgeous Florida is...




I am extremely happy when surrounded by trees & greenery. Something new I am learning about myself. But then I am reminded that trees have nothing on a delicious dessert. Few things in the world bring me happiness more than a delicious dessert. One of them being Two delicious desserts ;)

It was a wonderful end to a wonderful day. Looking forward to many more.....
